Lavender Roast Potatoes

- 1 bag small baby purple potatoes
- 2 tablespoons olive oil
- 1½ tablespoons dried culinary lavender
- salt and pepper to taste
- Preheat oven to 350 degrees.
- Toss potatoes in a bowl with oil and lavender to coat. Spread in a single layer on a baking sheet or pan. Roast for 30 minutes, stirring occasionally.
