How are those New Year’s Resolutions going? My resolution to save money and make our daily smoothies at home is going well. I’ve even come up with a few new combinations to keep the mornings exciting around here without resorting to non-compulsory sex.
One of my new favorites is the Strawberry Pina Colada. It is bursting with fruit and tropical flavors: fresh strawberries and blueberries from Driscoll’s Berries, fresh pineapple chunks, and coconut flakes and milk. The end result is a pleasing breakfast smoothie that will keep you satiated until lunch. If you want to serve this as an adult smoothie at your next brunch, just add a little rum.
- 1 cup pineapple
- 1½ cups Driscoll’s strawberries, cut in half and hulled
- ½ cup Driscoll’s blueberries
- ¼ cup sweetened coconut flakes
- 1 cup coconut milk
- Place ingredients in your blender (we use the Nutri Ninja IQ) and blend for approximately 1 minute until ingredients are combined.
- Pour and serve.
