Ingredients
  • 1 - 28 ounce can tomatoes, undrained
  • 1½ tablespoons thinly sliced ginger
  • 2 cloves garlic
  • 1 small red bell pepper, seeded and coarsely chopped
  • 1 cucumber, peeled, seeded and coarsely chopped
  • 3 tablespoons chopped fresh cilantro leaves and stems
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon oyster flavored sauce
  • 1 tablespoon chili garlic sauce
  • 1 tablespoon sesame oil
  • ¾ teaspoon salt
  • fresh cilantro sprigs for garnish
Instructions
  1. In a blender combine all ingredients except cilantro for garnish. Turn blender on and puree until smooth.
  2. To serve, ladle soup into chilled bowls and garnish with cilantro.
